Ingredients

  • fine bulgur - 100 grams
  • hot water - 200 milliliters
  • all-purpose flour - 50 grams
  • olive oil - 1 tablespoon
  • salt - 1 teaspoon
  • red lentils - 100 grams
  • onion - 1 medium, finely chopped
  • walnuts - 50 grams, chopped
  • tomato paste - 1 tablespoon
  • cumin - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • paprika - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • olive oil (for brushing) - 1 tablespoon

Steps

  1. In a mixing bowl, combine the fine bulgur and hot water. Cover and set aside for 15 minutes to absorb the water.
  2. After 15 minutes, add the flour, olive oil, and salt to the bulgur mixture. Knead until it forms a smooth dough. Set aside.
  3. In a saucepan, cook the red lentils in 300ml of water until soft (about 15 minutes). Drain and mash slightly.
  4. In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  5. Add the mashed lentils, chopped walnuts, tomato paste, cumin, black pepper, and paprika to the skillet. Mix well and cook for another 5 minutes. Remove from heat and stir in the chopped parsley.
  6. Preheat your oven to 180°C (350°F).
  7. Divide the bulgur dough into two equal parts. Roll each part into a flat disc about 1 cm thick.
  8. Place a portion of the lentil mixture in the center of one disc. Carefully fold the edges over to encase the filling, ensuring it is sealed properly.
  9. Repeat with the second disc and filling. Place the stuffed köfte on a baking tray lined with parchment paper.
  10. Brush the tops with olive oil and bake in the preheated oven for 25-30 minutes or until golden brown.
  11. Remove from the oven and let cool slightly before serving.
