Ingredients
- fine bulgur - 100 grams
- hot water - 200 milliliters
- all-purpose flour - 50 grams
- olive oil - 1 tablespoon
- salt - 1 teaspoon
- red lentils - 100 grams
- onion - 1 medium, finely chopped
- walnuts - 50 grams, chopped
- tomato paste - 1 tablespoon
- cumin - 1 teaspoon
- black pepper - 1/2 teaspoon
- paprika - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- olive oil (for brushing) - 1 tablespoon
Steps
- In a mixing bowl, combine the fine bulgur and hot water. Cover and set aside for 15 minutes to absorb the water.
- After 15 minutes, add the flour, olive oil, and salt to the bulgur mixture. Knead until it forms a smooth dough. Set aside.
- In a saucepan, cook the red lentils in 300ml of water until soft (about 15 minutes). Drain and mash slightly.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the mashed lentils, chopped walnuts, tomato paste, cumin, black pepper, and paprika to the skillet. Mix well and cook for another 5 minutes. Remove from heat and stir in the chopped parsley.
- Preheat your oven to 180°C (350°F).
- Divide the bulgur dough into two equal parts. Roll each part into a flat disc about 1 cm thick.
- Place a portion of the lentil mixture in the center of one disc. Carefully fold the edges over to encase the filling, ensuring it is sealed properly.
- Repeat with the second disc and filling. Place the stuffed köfte on a baking tray lined with parchment paper.
- Brush the tops with olive oil and bake in the preheated oven for 25-30 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
