- Sea bass fillets - 400 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, sliced
- Red onion - 1 small, sliced
Steps
- Rinse the sea bass fillets under cold water and pat them dry with paper towels.
- In a bowl, mix together the minced garlic, lemon juice, olive oil, salt, black pepper, and paprika to create a marinade.
- Add the sea bass fillets to the marinade and let them sit for 15 minutes to absorb the flavors.
- Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
- Once the oil is hot, add the marinated sea bass fillets skin-side down and cook for 4-5 minutes until the skin is golden and crispy.
- Carefully flip the fillets and cook for an additional 4-5 minutes until cooked through.
- In the same skillet, add the remaining olive oil and sauté the sliced red onion and zucchini for about 3-4 minutes until they start to soften.
- Add the halved cherry tomatoes and cook for another 2-3 minutes until they are slightly blistered.
- Serve the sea bass fillets on a plate, topped with the sautéed vegetables and garnished with fresh parsley.
