- Sea bass fillets - 400 grams
- Olive oil - 2 tablespoons
- Red onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Green bell pepper - 1 medium, sliced
- Carrot - 1 medium, thinly sliced
- Lemon - 1, juice and zest
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Water - 250 ml
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced red onion and minced garlic to the skillet, sautéing until the onions are translucent, about 3-4 minutes.
- Stir in the diced tomatoes, green bell pepper, and sliced carrot, cooking for another 5 minutes until the vegetables soften.
- Season the vegetable mixture with salt, black pepper, lemon juice, and lemon zest.
- Place the sea bass fillets on top of the vegetables in the skillet.
- Pour water into the skillet, cover with a lid, and let it simmer on low heat for about 15-20 minutes, or until the fish is cooked through and flakes easily.
- Garnish with chopped fresh parsley before serving.
