Ingredients

  • Sea bass fillets - 400 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Green bell pepper - 1 medium, sliced
  • Carrot - 1 medium, thinly sliced
  • Lemon - 1, juice and zest
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Water - 250 ml

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced red onion and minced garlic to the skillet, sautéing until the onions are translucent, about 3-4 minutes.
  3. Stir in the diced tomatoes, green bell pepper, and sliced carrot, cooking for another 5 minutes until the vegetables soften.
  4. Season the vegetable mixture with salt, black pepper, lemon juice, and lemon zest.
  5. Place the sea bass fillets on top of the vegetables in the skillet.
  6. Pour water into the skillet, cover with a lid, and let it simmer on low heat for about 15-20 minutes, or until the fish is cooked through and flakes easily.
  7. Garnish with chopped fresh parsley before serving.
