Ingredients
- Red lentils - 150 grams
- Fine bulgur - 50 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Green onions - 2, finely chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the red lentils under cold water and cook them in a pot with 400 ml of water until soft, about 15-20 minutes. Drain and let cool slightly.
- In a large mixing bowl, combine the cooked lentils, fine bulgur, chopped onion, minced garlic, grated carrot, tomato paste, olive oil, cumin powder, paprika, salt, and black pepper.
- Mix the ingredients well until fully combined, then add chopped parsley, green onions, and lemon juice, mixing until incorporated.
- Let the mixture sit for about 10 minutes to allow the bulgur to absorb moisture.
- Shape the mixture into small patties or köftes, about the size of your palm.
- Preheat a non-stick skillet over medium heat and lightly oil it. Cook the köftes for 5-7 minutes on each side, until golden and crispy.
