Ingredients

  • Red lentils - 150 grams
  • Fine bulgur - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Green onions - 2, finely chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water and cook them in a pot with 400 ml of water until soft, about 15-20 minutes. Drain and let cool slightly.
  2. In a large mixing bowl, combine the cooked lentils, fine bulgur, chopped onion, minced garlic, grated carrot, tomato paste, olive oil, cumin powder, paprika, salt, and black pepper.
  3. Mix the ingredients well until fully combined, then add chopped parsley, green onions, and lemon juice, mixing until incorporated.
  4. Let the mixture sit for about 10 minutes to allow the bulgur to absorb moisture.
  5. Shape the mixture into small patties or köftes, about the size of your palm.
  6. Preheat a non-stick skillet over medium heat and lightly oil it. Cook the köftes for 5-7 minutes on each side, until golden and crispy.
