Çılbır with Yogurt

- Eggs - 4 large
- Plain Greek yogurt - 200 grams
- Garlic - 1 clove, minced
- Butter - 30 grams
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 1 tablespoon, chopped (optional)
- Water - 1 liter (for poaching)
Steps
- In a small bowl, combine the Greek yogurt, minced garlic, salt, and black pepper. Mix well and set aside.
- In a large pot, bring 1 liter of water to a gentle simmer. Crack the eggs into individual small bowls.
- Using a spoon, create a gentle whirlpool in the simmering water and carefully slide the eggs into the center one at a time. Poach the eggs for about 3-4 minutes for a runny yolk.
- While the eggs are poaching, melt the butter in a small saucepan over low heat. Add paprika and stir until fragrant, about 1 minute.
- Once the eggs are poached, carefully remove them with a slotted spoon and let them drain briefly on a paper towel.
- To serve, place a generous dollop of the garlic yogurt on each plate, top with two poached eggs, and drizzle with the paprika butter. Garnish with fresh dill if desired.
