- Firm tofu - 200 grams
- Garlic - 2 cloves, minced
- Almond yogurt - 150 grams
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Dried mint - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
- Fresh parsley - for garnish
Steps
- Press the firm tofu to remove excess moisture, then crumble it into small pieces.
- In a pan, heat 1 tablespoon of olive oil over medium heat and add the crumbled tofu. Sauté for about 5-7 minutes until lightly golden and heated through.
- In a separate bowl, mix the almond yogurt with minced garlic, salt, and black pepper to taste. Stir until well combined.
- In a small pan, heat the remaining tablespoon of olive oil over medium heat. Add paprika and dried mint, cooking for about 1 minute until fragrant.
- In a large pot, bring 1 liter of water to a gentle simmer. Carefully add the crumbled tofu into the simmering water and let it cook for 2-3 minutes to warm through.
- To serve, place a generous amount of the garlic yogurt on a plate, top with the warmed tofu, and drizzle with the paprika-mint oil.
- Garnish with fresh parsley and serve immediately.
