Ingredients

  • Firm tofu - 200 grams
  • Garlic - 2 cloves, minced
  • Almond yogurt - 150 grams
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Dried mint - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter
  • Fresh parsley - for garnish

Steps

  1. Press the firm tofu to remove excess moisture, then crumble it into small pieces.
  2. In a pan, heat 1 tablespoon of olive oil over medium heat and add the crumbled tofu. Sauté for about 5-7 minutes until lightly golden and heated through.
  3. In a separate bowl, mix the almond yogurt with minced garlic, salt, and black pepper to taste. Stir until well combined.
  4. In a small pan, heat the remaining tablespoon of olive oil over medium heat. Add paprika and dried mint, cooking for about 1 minute until fragrant.
  5. In a large pot, bring 1 liter of water to a gentle simmer. Carefully add the crumbled tofu into the simmering water and let it cook for 2-3 minutes to warm through.
  6. To serve, place a generous amount of the garlic yogurt on a plate, top with the warmed tofu, and drizzle with the paprika-mint oil.
  7. Garnish with fresh parsley and serve immediately.
