Ingredients

  • Chickpeas - 200 grams (cooked or canned)
  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Tomato - 1 medium (chopped)
  • Red pepper flakes - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the chopped tomato, red pepper flakes, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes are soft and the sauce thickens.
  4. Stir in the cooked chickpeas and mix well. Cook for another 5 minutes to heat through.
  5. Transfer the chickpea mixture to a baking dish, making small wells for the eggs.
  6. Crack the eggs into each well carefully.
  7. Bake in the preheated oven for 10-12 minutes, or until the egg whites are set but the yolks are still runny.
  8. Garnish with fresh parsley before serving.
