- Chickpeas - 200 grams (cooked or canned)
- Eggs - 4 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves (minced)
- Tomato - 1 medium (chopped)
- Red pepper flakes - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chopped tomato, red pepper flakes, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes are soft and the sauce thickens.
- Stir in the cooked chickpeas and mix well. Cook for another 5 minutes to heat through.
- Transfer the chickpea mixture to a baking dish, making small wells for the eggs.
- Crack the eggs into each well carefully.
- Bake in the preheated oven for 10-12 minutes, or until the egg whites are set but the yolks are still runny.
- Garnish with fresh parsley before serving.
