Ingredients
- Silken tofu - 300 grams
- Unsweetened plant-based yogurt - 200 grams
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Smoked paprika - 1 teaspoon
- Dried mint - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - for garnish
- Bread (for serving) - 2 slices
Steps
- In a small saucepan, heat the olive oil over medium heat and add the minced garlic. Sauté for about 2 minutes until fragrant, being careful not to burn the garlic.
- Add the smoked paprika to the garlic oil and stir for another minute, then remove from heat.
- In a bowl, combine the unsweetened plant-based yogurt with dried mint, salt, and black pepper. Mix well until smooth.
- To serve, divide the yogurt mixture evenly between two plates.
- Gently heat the silken tofu in a microwave for 1-2 minutes until warm, then place the tofu on top of the yogurt mixture on each plate.
- Drizzle the garlic-infused olive oil over the tofu and yogurt layer.
- Garnish with fresh dill and serve with slices of bread on the side to scoop up the delicious mixture.
