Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green chili - 1, finely chopped
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped
  • Mint - 1 tablespoon, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add diced tomato, red bell pepper, and green chili to the saucepan. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
  5. Add paprika, cumin, salt, and black pepper. Mix well to combine the spices with the vegetables.
  6. Drain the soaked rice and add it to the saucepan, stirring gently to coat the rice with the vegetable mixture.
  7. Pour in 300 milliliters of water, bring it to a boil, then reduce to low heat, cover, and let it simmer for 15-20 minutes until the rice is fully cooked and water is absorbed.
  8. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  9. Serve warm, garnished with chopped parsley and mint.
