- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green chili - 1, finely chopped
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped
- Mint - 1 tablespoon, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another 1-2 minutes until fragrant.
- Add diced tomato, red bell pepper, and green chili to the saucepan. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
- Add paprika, cumin, salt, and black pepper. Mix well to combine the spices with the vegetables.
- Drain the soaked rice and add it to the saucepan, stirring gently to coat the rice with the vegetable mixture.
- Pour in 300 milliliters of water, bring it to a boil, then reduce to low heat, cover, and let it simmer for 15-20 minutes until the rice is fully cooked and water is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Serve warm, garnished with chopped parsley and mint.
