Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 milliliters
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Tomato sauce - 100 grams
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Spinach - 100 grams, fresh
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a bowl, mix warm water and yeast, let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes.
  5. While the dough is rising, prepare the topping by heating a pan over medium heat. Add minced garlic and sauté until fragrant.
  6. Add diced red bell pepper and zucchini to the pan, cooking until softened for about 5 minutes.
  7. Stir in the tomato sauce, spinach, cumin, paprika, and black pepper. Cook for an additional 5 minutes until spinach is wilted.
  8. Preheat the oven to 220°C (428°F).
  9. Once the dough has risen, punch it down and roll it out into two oval shapes on a lightly floured surface.
  10. Transfer the rolled dough to a baking sheet lined with parchment paper.
  11. Spread the vegetable topping evenly over the dough.
  12. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  13. Remove from the oven, garnish with fresh parsley, and serve hot.
