  • Silken tofu - 200 grams
  • Vegetable broth - 500 ml

  • Onion - 1 medium, chopped
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the tomato paste, paprika, and cumin, cooking for 2-3 minutes to enhance the flavors.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer and gently add the silken tofu, breaking it into chunks as you add it.
  6. Simmer for 10-15 minutes, allowing the flavors to meld together. Stir occasionally to avoid sticking.
  7. Season with salt, black pepper, and lemon juice, adjusting to taste.
  8. Remove from heat and stir in the fresh parsley before serving.
