- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste, paprika, and cumin, cooking for 2-3 minutes to enhance the flavors.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and gently add the silken tofu, breaking it into chunks as you add it.
- Simmer for 10-15 minutes, allowing the flavors to meld together. Stir occasionally to avoid sticking.
- Season with salt, black pepper, and lemon juice, adjusting to taste.
- Remove from heat and stir in the fresh parsley before serving.
