Ingredients

  • Eggs - 4 large
  • Plain yogurt - 200 grams
  • Garlic - 1 clove, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 1 tablespoon, chopped (for garnish)

Steps

  1. In a saucepan, bring water to a gentle simmer and add a pinch of salt.
  2. Crack each egg into a small bowl, then gently slide them into the simmering water, poaching for about 3-4 minutes until the whites are set but the yolks are still runny.
  3. While the eggs are poaching, in a small bowl, mix the yogurt with minced garlic, salt, and black pepper until smooth.
  4. In a small pan, heat the olive oil over medium heat and add paprika, stirring for about 30 seconds until fragrant.
  5. Once the eggs are poached, carefully remove them with a slotted spoon and drain excess water.
  6. To serve, spread the garlic yogurt on a plate, place the poached eggs on top, and drizzle the paprika oil over the eggs.
  7. Garnish with chopped fresh dill and serve immediately.
