Çılbır

Çılbır is a traditional Turkish breakfast dish featuring poached eggs on a bed of garlicky yogurt, but this vegan version replaces eggs with silken tofu for a creamy and satisfying meal. Topped with a fragrant paprika-infused olive oil, it's a delightful way to start your day.

Ingredients

  • Silken tofu - 300 grams
  • Garlic - 2 cloves, minced
  • Plant-based yogurt - 200 grams (e.g., almond or coconut yogurt)
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Start by draining the silken tofu, then gently pat it dry with a kitchen towel and set aside.
  2. In a small bowl, mix the plant-based yogurt with minced garlic, lemon juice, salt, and black pepper to taste. Set aside.
  3. Heat the olive oil in a small saucepan over medium heat. Once hot, add the smoked paprika and stir quickly to avoid burning, cooking for about 30 seconds.
  4. In a serving bowl, spread the garlic yogurt mixture evenly as a base.
  5. Carefully place the silken tofu on top of the yogurt, breaking it into large pieces.
  6. Drizzle the paprika oil over the tofu and yogurt.
  7. Garnish with fresh dill and additional salt and pepper if desired.
  8. Serve immediately with crusty bread or pita on the side.
