Ingredients

  • Mackerel fillets - 300 grams
  • Salt - 60 grams
  • Water - 500 ml
  • Olive oil - 3 tablespoons
  • White vinegar - 3 tablespoons
  • Lemon - 1, juiced
  • Black peppercorns - 1 teaspoon
  • Bay leaves - 2
  • Fresh parsley - 2 tablespoons, chopped
  • Red onion - 1 small, thinly sliced

Steps

  1. In a bowl, dissolve the salt in 500 ml of water to create a brine.
  2. Submerge the mackerel fillets in the brine and refrigerate for 30 minutes.
  3. After brining, rinse the mackerel under cold water and pat dry with paper towels.
  4. In a clean jar, layer the mackerel fillets with black peppercorns, bay leaves, and sliced red onion.
  5. In a small bowl, mix olive oil, white vinegar, and lemon juice, then pour this mixture over the layered fish.
  6. Seal the jar and refrigerate for at least 4 hours or preferably overnight to allow the flavors to develop.
  7. Before serving, garnish with chopped parsley and enjoy chilled.
