- Mackerel fillets - 300 grams
- Salt - 60 grams
- Water - 500 ml
- Olive oil - 3 tablespoons
- White vinegar - 3 tablespoons
- Lemon - 1, juiced
- Black peppercorns - 1 teaspoon
- Bay leaves - 2
- Fresh parsley - 2 tablespoons, chopped
- Red onion - 1 small, thinly sliced
Steps
- In a bowl, dissolve the salt in 500 ml of water to create a brine.
- Submerge the mackerel fillets in the brine and refrigerate for 30 minutes.
- After brining, rinse the mackerel under cold water and pat dry with paper towels.
- In a clean jar, layer the mackerel fillets with black peppercorns, bay leaves, and sliced red onion.
- In a small bowl, mix olive oil, white vinegar, and lemon juice, then pour this mixture over the layered fish.
- Seal the jar and refrigerate for at least 4 hours or preferably overnight to allow the flavors to develop.
- Before serving, garnish with chopped parsley and enjoy chilled.
