Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 milliliters
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Firm tofu - 150 grams, crumbled
  • Tomato paste - 2 tablespoons
  • Red bell pepper - 1 small, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead the dough for about 5-7 minutes until smooth.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. While the dough is rising, prepare the topping: In a skillet over medium heat, sauté the onions and garlic in a little olive oil until softened.
  5. Add the red bell pepper, crumbled tofu, tomato paste, paprika, cumin, and black pepper. Cook for an additional 5-7 minutes until heated through. Stir in parsley and lemon juice, then remove from heat.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal pieces. Roll each piece into a thin round shape on a floured surface.
  8. Place the rolled dough on a baking sheet lined with parchment paper. Spread the tofu mixture evenly over each base.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are golden and crispy.
  10. Remove from the oven, and let cool slightly before slicing. Serve warm with extra lemon wedges if desired.
