- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Ground beef or lamb - 150 grams
- Onion, finely chopped - 1 small
- Garlic, minced - 1 clove
- Tomato paste - 1 tablespoon
- Red bell pepper, finely chopped - 1/2
- Fresh parsley, chopped - 2 tablespoons
- Fresh mint, chopped - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise for 30 minutes.
- In the meantime, prepare the topping by combining the ground meat, onion, garlic, tomato paste, red bell pepper, parsley, mint, cumin, paprika, black pepper, lemon juice, and salt in a bowl. Mix well until all ingredients are combined.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Once the dough has risen, divide it into two equal portions. Roll out each portion into a thin circle (about 25 cm in diameter).
- Place the rolled-out dough on the prepared baking sheet. Spread an even layer of the meat mixture over each dough circle, leaving a small border around the edges.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the topping is cooked through.
- Remove from the oven and let it cool slightly before slicing. Serve warm, garnished with additional fresh herbs if desired.
