Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Ground beef or lamb - 150 grams
  • Onion, finely chopped - 1 small
  • Garlic, minced - 1 clove
  • Tomato paste - 1 tablespoon
  • Red bell pepper, finely chopped - 1/2
  • Fresh parsley, chopped - 2 tablespoons
  • Fresh mint, chopped - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover, and let it rise for 30 minutes.
  4. In the meantime, prepare the topping by combining the ground meat, onion, garlic, tomato paste, red bell pepper, parsley, mint, cumin, paprika, black pepper, lemon juice, and salt in a bowl. Mix well until all ingredients are combined.
  5. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  6. Once the dough has risen, divide it into two equal portions. Roll out each portion into a thin circle (about 25 cm in diameter).
  7. Place the rolled-out dough on the prepared baking sheet. Spread an even layer of the meat mixture over each dough circle, leaving a small border around the edges.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the topping is cooked through.
  9. Remove from the oven and let it cool slightly before slicing. Serve warm, garnished with additional fresh herbs if desired.
