Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Tomato - 1 medium, finely chopped
  • Red bell pepper - 1/2, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon - 1, for serving

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the topping. In a bowl, mix the chopped tomato, red bell pepper, onion, garlic, parsley, cumin, paprika, and black pepper until well combined.
  5. Preheat your oven to 250°C (482°F) or as high as it will go.
  6. Once the dough has risen, divide it into two equal portions. Roll each portion into a thin circle (about 25 cm in diameter) on a floured surface.
  7. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spread half of the vegetable mixture evenly over each flatbread.
  8. Bake in the preheated oven for 8-10 minutes, or until the edges are crispy and the topping is slightly browned.
  9. Remove from the oven and let cool for a minute. Serve hot, garnished with fresh parsley and lemon wedges.
