- All-purpose flour - 200 grams
- Warm water - 100 ml
- Olive oil - 1 tablespoon
- Active dry yeast - 5 grams
- Salt - 1 teaspoon
- Ground lamb or beef - 150 grams
- Onion, finely chopped - 1 small
- Garlic, minced - 2 cloves
- Tomato paste - 1 tablespoon
- Red bell pepper, finely chopped - 1/2
- Parsley, chopped - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
Steps
- In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
- While the dough rises, prepare the topping. In a skillet, heat a little olive oil over medium heat and sauté the onion and garlic until softened.
- Add the ground meat to the skillet, cooking until browned. Stir in the tomato paste, red bell pepper, parsley, paprika, cumin, black pepper, lemon juice, and salt to taste. Cook for another 5 minutes until well combined.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into a thin circle on a floured surface.
- Transfer the rolled dough to a baking sheet lined with parchment paper. Spread half of the meat mixture evenly on each dough circle.
- Bake in the preheated oven for 10-12 minutes until the edges are crispy and the topping is cooked through.
- Remove from the oven, let cool slightly, and serve warm, optionally with fresh lemon wedges.
