  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Tomato paste - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add the diced carrot and potato to the pot, stirring for another 5 minutes until they begin to soften.
  3. Stir in the chopped cabbage and cook for 3-4 minutes, allowing it to wilt slightly.
  4. Mix in the tomato paste, dried thyme, salt, and black pepper, ensuring the vegetables are well coated.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, or until the vegetables are tender.
  6. Add the lemon juice to the soup and stir well. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
