- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Tomato paste - 1 tablespoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and potato to the pot, stirring for another 5 minutes until they begin to soften.
- Stir in the chopped cabbage and cook for 3-4 minutes, allowing it to wilt slightly.
- Mix in the tomato paste, dried thyme, salt, and black pepper, ensuring the vegetables are well coated.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, or until the vegetables are tender.
- Add the lemon juice to the soup and stir well. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
