Ingredients

  • Cabbage leaves - 8 large leaves
  • Long-grain rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Tomato - 1 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Blanch the cabbage leaves in boiling water for 2-3 minutes until softened. Remove and let cool.
  2. In a pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in chopped tomato, cooking for another 2-3 minutes until softened.
  4. Add the rice, parsley, dill, salt, black pepper, and paprika to the pan, mixing well. Cook for an additional 2 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until the rice absorbs the liquid. Remove from heat and let cool slightly.
  6. Place a tablespoon of the rice mixture at the base of each cabbage leaf. Fold the sides in and roll tightly to form a parcel.
  7. Arrange the stuffed cabbage rolls seam-side down in a pot. Drizzle with lemon juice and add enough water to cover the rolls halfway.
  8. Cover the pot and cook on low heat for about 30 minutes until the cabbage is tender.
