Ingredients
- Cabbage leaves - 8 large leaves
- Long-grain rice - 100 grams
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Tomato - 1 medium, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
Steps
- Blanch the cabbage leaves in boiling water for 2-3 minutes until softened. Remove and let cool.
- In a pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in chopped tomato, cooking for another 2-3 minutes until softened.
- Add the rice, parsley, dill, salt, black pepper, and paprika to the pan, mixing well. Cook for an additional 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until the rice absorbs the liquid. Remove from heat and let cool slightly.
- Place a tablespoon of the rice mixture at the base of each cabbage leaf. Fold the sides in and roll tightly to form a parcel.
- Arrange the stuffed cabbage rolls seam-side down in a pot. Drizzle with lemon juice and add enough water to cover the rolls halfway.
- Cover the pot and cook on low heat for about 30 minutes until the cabbage is tender.
