- Lamb shoulder - 200 grams
- Granulated sugar - 100 grams
- Water - 500 ml
- Rice flour - 30 grams
- Cardamom powder - 1/4 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Chopped pistachios - 30 grams
- Rose water - 1 teaspoon
- Salt - a pinch
Steps
- In a pot, combine the lamb shoulder, 500 ml of water, and a pinch of salt. Cook over medium heat until the lamb is tender, about 40 minutes.
- Once cooked, remove the lamb from the pot and let it cool. Reserve the cooking liquid.
- In a separate bowl, mix the rice flour with a little of the reserved cooking liquid to create a smooth paste.
- Gradually add the rice flour paste to the remaining cooking liquid in the pot, stirring continuously to avoid lumps.
- Add the granulated sugar, cardamom powder, and ground cinnamon to the pot. Continue to cook on low heat, stirring until the mixture thickens, about 10 minutes.
- Shred the cooled lamb and fold it into the thickened mixture, stirring well to combine.
- Pour the mixture into a greased dish and let it cool to room temperature.
- Once cooled, refrigerate for at least 30 minutes to set.
- Before serving, drizzle with rose water and sprinkle chopped pistachios on top.
