Ingredients

  • Lamb shoulder - 200 grams
  • Granulated sugar - 100 grams
  • Water - 500 ml
  • Rice flour - 30 grams
  • Cardamom powder - 1/4 teaspoon
  • Ground cinnamon - 1/4 teaspoon
  • Chopped pistachios - 30 grams
  • Rose water - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a pot, combine the lamb shoulder, 500 ml of water, and a pinch of salt. Cook over medium heat until the lamb is tender, about 40 minutes.
  2. Once cooked, remove the lamb from the pot and let it cool. Reserve the cooking liquid.
  3. In a separate bowl, mix the rice flour with a little of the reserved cooking liquid to create a smooth paste.
  4. Gradually add the rice flour paste to the remaining cooking liquid in the pot, stirring continuously to avoid lumps.
  5. Add the granulated sugar, cardamom powder, and ground cinnamon to the pot. Continue to cook on low heat, stirring until the mixture thickens, about 10 minutes.
  6. Shred the cooled lamb and fold it into the thickened mixture, stirring well to combine.
  7. Pour the mixture into a greased dish and let it cool to room temperature.
  8. Once cooled, refrigerate for at least 30 minutes to set.
  9. Before serving, drizzle with rose water and sprinkle chopped pistachios on top.
