Ingredients

  • Lamb shoulder - 500 grams
  • Carrots - 2 medium, sliced
  • Zucchini - 1 medium, diced
  • Onion - 1 large, chopped
  • Garlic - 3 cloves, minced
  • Tomatoes - 2 medium, diced
  • Red bell pepper - 1, chopped
  • Olive oil - 3 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 250 milliliters

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a large Dutch oven or oven-safe pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Cut the lamb shoulder into large chunks and season with salt, pepper, paprika, and cumin. Add the lamb to the pot and brown on all sides, approximately 5-7 minutes.
  4. Once the lamb is browned, add the diced tomatoes, carrots, zucchini, and red bell pepper to the pot. Stir to combine all the ingredients.
  5. Pour in the water, ensuring that the lamb and vegetables are partially submerged. Bring the mixture to a simmer.
  6. Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 hours or until the lamb is fork-tender and the vegetables are soft.
  7. Remove the pot from the oven and sprinkle the chopped parsley over the dish before serving.
