- Lamb shoulder - 300 grams
- Sea bass fillets - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Fresh rosemary - 1 teaspoon, chopped
- Lemon juice - 2 tablespoons
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Sea salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 150°C (300°F).
- In a bowl, marinate the lamb shoulder with olive oil, minced garlic, chopped rosemary, lemon juice, sea salt, and black pepper. Let it sit for at least 30 minutes.
- Place the marinated lamb in a roasting pan and cover it with aluminum foil. Roast in the preheated oven for about 60 minutes until tender.
- While the lamb is cooking, prepare the vegetables. In a skillet, heat a tablespoon of olive oil over medium heat and sauté the sliced zucchini and red bell pepper until they are tender, about 5-7 minutes. Season with salt and pepper.
- In the last 15 minutes of lamb cooking, add the sea bass fillets to the roasting pan, placing them alongside the lamb to absorb the flavors. Cook until the fish is opaque and flakes easily with a fork.
- Once everything is cooked, remove from the oven, and let it rest for 5 minutes before serving.
- Serve the tender lamb alongside the sautéed vegetables and the roasted sea bass, drizzling a little extra lemon juice over the top if desired.
