Ingredients
- Lamb shoulder - 300 grams, cut into chunks
- Basmati rice - 150 grams, rinsed
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the lamb chunks to the pot, browning them on all sides for about 5-7 minutes.
- Stir in the diced carrot and tomato, followed by cumin, cinnamon, paprika, salt, and pepper. Cook for another 5 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes until the lamb is tender.
- Remove the lamb from the pot and set aside. Strain the broth to remove solids, reserving the liquid.
- Return the pot to the heat and add the rinsed basmati rice. Stir well to coat the rice with the flavors.
- Pour the reserved broth over the rice. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and gently mix in the reserved lamb pieces. Let it rest for 5 minutes before serving.
- Garnish with fresh parsley and serve warm.
