Ingredients
- Cauliflower - 500 grams
- Lamb shoulder, cubed - 300 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken or vegetable broth - 250 ml
- Fresh parsley, chopped - 2 tablespoons
Steps
- Start by preparing the cauliflower rice: remove the leaves and stem from the cauliflower, then cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- Add the cubed lamb to the pot, browning it on all sides for about 10 minutes.
- Stir in the tomato paste, cumin, paprika, salt, and black pepper, mixing well to coat the meat evenly. Cook for another 5 minutes.
- Pour in the chicken or vegetable broth, bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes until the lamb is tender.
- While the lamb is cooking, lightly steam the cauliflower rice for about 5-7 minutes until tender but not mushy. Drain any excess water.
- Once the lamb is tender, remove the pot from heat. Serve the lamb mixture over the cauliflower rice and garnish with fresh parsley.
