Ingredients

  • Cauliflower - 500 grams
  • Lamb shoulder, cubed - 300 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken or vegetable broth - 250 ml
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Start by preparing the cauliflower rice: remove the leaves and stem from the cauliflower, then cut it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Add the cubed lamb to the pot, browning it on all sides for about 10 minutes.
  4. Stir in the tomato paste, cumin, paprika, salt, and black pepper, mixing well to coat the meat evenly. Cook for another 5 minutes.
  5. Pour in the chicken or vegetable broth, bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes until the lamb is tender.
  6. While the lamb is cooking, lightly steam the cauliflower rice for about 5-7 minutes until tender but not mushy. Drain any excess water.
  7. Once the lamb is tender, remove the pot from heat. Serve the lamb mixture over the cauliflower rice and garnish with fresh parsley.
