- Carrot, diced - 1 small (about 50 grams)
- Celery, diced - 1 stalk (about 50 grams)
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon (or to taste)
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Water - 1 liter
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and celery, cooking for an additional 3-4 minutes until softened.
- Add the lamb shoulder to the pot, browning it on all sides for about 8-10 minutes.
- Sprinkle in the cumin, paprika, salt, and black pepper, stirring to coat the meat and vegetables evenly.
- Pour in the water, bringing the mixture to a boil. Once boiling, reduce the heat to low and cover the pot, allowing it to simmer for 60 minutes or until the lamb is tender.
- Once cooked, remove the lamb shoulder and shred the meat using two forks. Return the shredded meat to the pot.
- Stir in the chopped parsley and lemon juice, adjusting seasoning if necessary. Let it simmer for an additional 5 minutes.
- Serve hot, garnished with extra parsley if desired.
