  • Celery, diced - 1 stalk (about 50 grams)
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Water - 1 liter
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrot, and celery, cooking for an additional 3-4 minutes until softened.
  3. Add the lamb shoulder to the pot, browning it on all sides for about 8-10 minutes.
  4. Sprinkle in the cumin, paprika, salt, and black pepper, stirring to coat the meat and vegetables evenly.
  5. Pour in the water, bringing the mixture to a boil. Once boiling, reduce the heat to low and cover the pot, allowing it to simmer for 60 minutes or until the lamb is tender.
  6. Once cooked, remove the lamb shoulder and shred the meat using two forks. Return the shredded meat to the pot.
  7. Stir in the chopped parsley and lemon juice, adjusting seasoning if necessary. Let it simmer for an additional 5 minutes.
  8. Serve hot, garnished with extra parsley if desired.
