- Lamb shoulder - 300 grams, cubed
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 medium, chopped
- Lamb or beef broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Salt - to taste
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the cubed lamb shoulder to the pot and brown it on all sides.
- Stir in the diced carrot and chopped tomato, cooking for an additional 5 minutes.
- Season the mixture with ground cumin, black pepper, and salt. Add the bay leaf.
- Pour in the lamb or beef broth, bring to a boil, then reduce the heat to low and cover. Simmer for 45 minutes until the lamb is tender.
- While the lamb cooks, rinse the basmati rice under cold water until the water runs clear. Drain well.
- After 45 minutes, stir in the rinsed rice into the pot with the lamb. Ensure the rice is submerged in the broth.
- Cover the pot and let it simmer on low heat for another 15-20 minutes until the rice is cooked and has absorbed the broth.
- Once done, remove from heat and let it rest for 5 minutes before fluffing the rice with a fork.
- Serve hot, garnished with fresh parsley.
