- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Ground lamb - 300 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Red pepper flakes - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Yogurt - for serving (optional)
Steps
- In a mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
- In another bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Knead until a smooth dough forms, about 10 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
- In a skillet, heat a little olive oil and sauté the chopped onion and minced garlic until translucent.
- Add the ground lamb to the skillet and cook until browned. Stir in tomato paste, red pepper flakes, cumin, black pepper, and salt. Cook for an additional 5 minutes until well mixed. Remove from heat and stir in chopped parsley.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
- Place the rolled-out dough on a baking sheet lined with parchment paper. Spread the lamb mixture evenly over each piece, leaving a small border around the edges.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven and let cool slightly. Serve hot with yogurt on the side if desired.
