Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Ground lamb - 300 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Red pepper flakes - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Yogurt - for serving (optional)

Steps

  1. In a mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy.
  2. In another bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Knead until a smooth dough forms, about 10 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes or until doubled in size.
  4. In a skillet, heat a little olive oil and sauté the chopped onion and minced garlic until translucent.
  5. Add the ground lamb to the skillet and cook until browned. Stir in tomato paste, red pepper flakes, cumin, black pepper, and salt. Cook for an additional 5 minutes until well mixed. Remove from heat and stir in chopped parsley.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
  8. Place the rolled-out dough on a baking sheet lined with parchment paper. Spread the lamb mixture evenly over each piece, leaving a small border around the edges.
  9. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  10. Remove from the oven and let cool slightly. Serve hot with yogurt on the side if desired.
