Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Bulgur (medium grain) - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Green bell pepper - 1, diced
  • Tomato paste - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the diced tomato, green bell pepper, tomato paste, cumin, paprika, salt, and black pepper. Cook for about 5 minutes until the vegetables soften.
  4. Pour in 500 milliliters of water, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes until the lamb is tender.
  5. While the lamb is cooking, rinse the bulgur under cold water. In a separate pot, bring 300 milliliters of water to a boil. Add the rinsed bulgur, a pinch of salt, and stir. Cover and let it cook on low heat for about 12-15 minutes until the bulgur is fluffy and water is absorbed.
  6. Once the lamb is cooked, check the seasoning and adjust if necessary. Serve the lamb mixture over the bulgur, garnished with fresh parsley.
