- Lamb shoulder - 300 grams, cut into cubes
- Bulgur (medium grain) - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Green bell pepper - 1, diced
- Tomato paste - 1 tablespoon
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the diced tomato, green bell pepper, tomato paste, cumin, paprika, salt, and black pepper. Cook for about 5 minutes until the vegetables soften.
- Pour in 500 milliliters of water, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes until the lamb is tender.
- While the lamb is cooking, rinse the bulgur under cold water. In a separate pot, bring 300 milliliters of water to a boil. Add the rinsed bulgur, a pinch of salt, and stir. Cover and let it cook on low heat for about 12-15 minutes until the bulgur is fluffy and water is absorbed.
- Once the lamb is cooked, check the seasoning and adjust if necessary. Serve the lamb mixture over the bulgur, garnished with fresh parsley.
