Ingredients

  • Lamb shoulder - 200 grams
  • Water - 500 ml
  • Granulated sugar - 50 grams
  • Honey - 20 grams
  • Cinnamon stick - 1
  • Ground cardamom - 1/2 teaspoon
  • Pistachios - 30 grams, chopped
  • Rose water - 1 teaspoon
  • Salt - to taste

Steps

  1. In a large pot, add the lamb shoulder and cover it with water. Bring to a boil, then reduce the heat and simmer for about 1 hour until the lamb is tender.
  2. Remove the lamb from the pot and let it cool slightly. Once cool, shred the meat into small pieces and set aside.
  3. In the same pot, add the granulated sugar, honey, cinnamon stick, ground cardamom, and a pinch of salt to the remaining broth. Bring to a simmer and stir until the sugar dissolves.
  4. Add the shredded lamb back into the pot and stir well to combine. Allow the mixture to cook on low heat for an additional 30 minutes, allowing the flavors to meld.
  5. Remove the pot from heat and stir in the rose water.
  6. Serve the Kuzu Tandır Tatlısı in small bowls, garnished with chopped pistachios on top.
