Ingredients
- Lamb shoulder - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Gluten-free burger buns - 2
- Lettuce leaves - 2 pieces
- Tomato - 1 medium, sliced
- Red onion - 1/2, thinly sliced
- Yogurt - 100 grams
- Fresh mint - a handful, chopped
Steps
- Preheat the oven to 160°C (320°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, then stir in the tomato paste, paprika, cumin, salt, and black pepper.
- Cut the lamb shoulder into large chunks and add it to the skillet, stirring to coat with the spice mixture.
- Transfer the lamb and onion mixture to a baking dish and cover tightly with aluminum foil.
- Cook in the preheated oven for about 2 hours, or until the lamb is fork-tender.
- Remove the lamb from the oven and let it cool slightly. Shred the meat with two forks.
- Toast the gluten-free burger buns lightly in a pan or oven.
- To assemble the burgers, place a generous amount of shredded lamb on the bottom half of each bun.
- Top with lettuce, tomato slices, red onion, and a dollop of yogurt. Sprinkle with chopped mint.
- Place the top half of the bun over the fillings, serve immediately, and enjoy your Kuzu Tandır Burger.
