Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 300 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large bowl, combine the lamb shoulder with olive oil, chopped onion, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well to coat the lamb evenly.
  3. Place the marinated lamb in a roasting pan and cover it with aluminum foil. Roast in the preheated oven for about 2 hours, or until the meat is tender and easily pulls apart with a fork.
  4. While the lamb is cooking, prepare the cauliflower rice. In a skillet over medium heat, add a splash of olive oil and the grated cauliflower. Sauté for about 5-7 minutes until slightly tender. Season with salt and pepper to taste.
  5. Once the lamb is done, remove it from the oven and let it rest for 10 minutes before shredding it.
  6. To serve, place a generous portion of cauliflower rice on each plate, top with shredded lamb, and garnish with fresh parsley and a squeeze of lemon juice.
