Ingredients
- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower - 300 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat the oven to 160°C (320°F).
- In a large bowl, combine the lamb shoulder with olive oil, chopped onion, minced garlic, cumin, coriander, paprika, salt, and black pepper. Mix well to coat the lamb evenly.
- Place the marinated lamb in a roasting pan and cover it with aluminum foil. Roast in the preheated oven for about 2 hours, or until the meat is tender and easily pulls apart with a fork.
- While the lamb is cooking, prepare the cauliflower rice. In a skillet over medium heat, add a splash of olive oil and the grated cauliflower. Sauté for about 5-7 minutes until slightly tender. Season with salt and pepper to taste.
- Once the lamb is done, remove it from the oven and let it rest for 10 minutes before shredding it.
- To serve, place a generous portion of cauliflower rice on each plate, top with shredded lamb, and garnish with fresh parsley and a squeeze of lemon juice.
