Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Onion - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, paprika, salt, and black pepper to create a marinade.
  2. Cut the lamb shoulder into large chunks and add it to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 160°C (320°F).
  4. In a large oven-safe pot or Dutch oven, layer the sliced onion, bell pepper, and zucchini at the bottom.
  5. Place the marinated lamb chunks on top of the vegetables.
  6. Cover the pot with a lid and cook in the preheated oven for about 2 hours or until the lamb is tender and easily pulls apart with a fork.
  7. Once cooked, remove from the oven and let it rest for 10 minutes before serving.
  8. Garnish with fresh parsley and serve with additional grilled vegetables or a side salad.
