- Lamb shoulder - 500 grams
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Carrot - 1 medium, chopped
- Bell pepper - 1 medium, chopped
- Olive oil - 2 tablespoons
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 250 milliliters
Steps
- Preheat the oven to 160°C (320°F).
- In a large Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Add the diced tomato, chopped carrot, and bell pepper, cooking for an additional 5 minutes.
- Season the lamb shoulder with turmeric, cumin, paprika, salt, and black pepper, then add it to the pot.
- Pour in the water, ensuring the lamb is partially submerged.
- Cover the pot and transfer it to the oven, cooking for about 2 hours or until the lamb is fork-tender.
- Once cooked, remove from the oven and let it rest for 10 minutes.
- Garnish with fresh parsley and serve with whole grain rice or whole wheat bread.
