Ingredients

  • Lamb shoulder - 200 grams, cut into small cubes
  • Water - 1 liter
  • Carrot - 1 medium, diced
  • Potato - 1 small, diced
  • Onion - 1 small, chopped
  • Garlic - 1 clove, minced
  • Rice - 50 grams, rinsed
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh dill - 1 tablespoon, chopped

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the lamb cubes to the pot and cook until browned on all sides.
  3. Stir in the diced carrot and potato, cooking for another 5 minutes.
  4. Pour in 1 liter of water and bring to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes, skimming any foam that rises to the surface.
  5. Add the rinsed rice, salt, and black pepper. Continue to simmer for an additional 15 minutes, or until the rice is tender.
  6. Remove from heat, stir in the lemon juice and chopped dill. Adjust seasoning if necessary.
  7. Serve hot in bowls, garnished with extra dill if desired.
