Ingredients

  • Lamb shoulder, cubed - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Celery, diced - 1 stalk
  • Tomato paste - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef or lamb broth - 1 liter
  • Bay leaf - 1
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes until the vegetables soften.
  3. Stir in the cubed lamb shoulder and cook until browned on all sides, about 8-10 minutes.
  4. Add the tomato paste, cumin, paprika, salt, and black pepper. Mix well to coat the meat and vegetables with the spices.
  5. Pour in the beef or lamb broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the lamb is tender.
  6. Remove the bay leaf, and check for seasoning, adjusting salt and pepper if necessary.
  7. Serve hot, garnished with chopped fresh parsley.
