Ingredients
- Lamb shoulder, cubed - 300 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Celery, diced - 1 stalk
- Tomato paste - 1 tablespoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef or lamb broth - 1 liter
- Bay leaf - 1
- Fresh parsley, chopped - 2 tablespoons
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 5 minutes until the vegetables soften.
- Stir in the cubed lamb shoulder and cook until browned on all sides, about 8-10 minutes.
- Add the tomato paste, cumin, paprika, salt, and black pepper. Mix well to coat the meat and vegetables with the spices.
- Pour in the beef or lamb broth and add the bay leaf. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the lamb is tender.
- Remove the bay leaf, and check for seasoning, adjusting salt and pepper if necessary.
- Serve hot, garnished with chopped fresh parsley.
