Ingredients

  • Lamb shoulder, cubed - 300 grams
  • Cauliflower, chopped - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Canned diced tomatoes - 200 grams
  • Tomato paste - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Greek yogurt - 100 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the cubed lamb shoulder and sear until browned on all sides, about 5-7 minutes.
  2. Add minced garlic to the pan and sauté for 1 minute until fragrant. Stir in canned diced tomatoes, tomato paste, cumin, paprika, salt, and black pepper. Cover and simmer for 25 minutes until the lamb is tender.
  3. While the lamb is cooking, steam the chopped cauliflower until tender, about 10-12 minutes. Drain and transfer to a blender.
  4. Add 1 tablespoon of olive oil and a pinch of salt to the cauliflower in the blender. Blend until smooth and creamy to create the cauliflower puree.
  5. Once the lamb is cooked, serve it over a bed of cauliflower puree. Drizzle with the sauce from the pan and top with a dollop of Greek yogurt. Garnish with chopped parsley before serving.
