Ingredients
- Lamb shoulder, cubed - 300 grams
- Cauliflower, chopped - 400 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Canned diced tomatoes - 200 grams
- Tomato paste - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Greek yogurt - 100 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the cubed lamb shoulder and sear until browned on all sides, about 5-7 minutes.
- Add minced garlic to the pan and sauté for 1 minute until fragrant. Stir in canned diced tomatoes, tomato paste, cumin, paprika, salt, and black pepper. Cover and simmer for 25 minutes until the lamb is tender.
- While the lamb is cooking, steam the chopped cauliflower until tender, about 10-12 minutes. Drain and transfer to a blender.
- Add 1 tablespoon of olive oil and a pinch of salt to the cauliflower in the blender. Blend until smooth and creamy to create the cauliflower puree.
- Once the lamb is cooked, serve it over a bed of cauliflower puree. Drizzle with the sauce from the pan and top with a dollop of Greek yogurt. Garnish with chopped parsley before serving.
