Ingredients
- Lamb shoulder - 300 grams, finely chopped
- Vine leaves - 12 pieces, blanched
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 2 tablespoons
- Water - 200 ml
Steps
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and chopped lamb to the skillet, cooking until the lamb is browned and cooked through, about 10 minutes.
- Stir in chopped parsley, dill, black pepper, salt, and paprika. Cook for an additional 2 minutes to combine flavors. Remove from heat and let cool slightly.
- Preheat your oven to 180°C (350°F).
- Lay a vine leaf on a clean surface, vein side up. Place about 2 tablespoons of the lamb mixture at the base of the leaf, fold in the sides, and roll tightly to form a wrap. Repeat with remaining leaves and filling.
- Place the wrapped vine leaves in a baking dish, seam side down. Pour lemon juice and water over the wraps.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove from the oven, let cool for a few minutes, then serve warm.
