Kuzu Sarması

Ingredients

  • Lamb shoulder - 300 grams, finely chopped
  • Vine leaves - 12 pieces, blanched
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Water - 200 ml

Steps

  1. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  2. Add minced garlic and chopped lamb to the skillet, cooking until the lamb is browned and cooked through, about 10 minutes.
  3. Stir in chopped parsley, dill, black pepper, salt, and paprika. Cook for an additional 2 minutes to combine flavors. Remove from heat and let cool slightly.
  4. Preheat your oven to 180°C (350°F).
  5. Lay a vine leaf on a clean surface, vein side up. Place about 2 tablespoons of the lamb mixture at the base of the leaf, fold in the sides, and roll tightly to form a wrap. Repeat with remaining leaves and filling.
  6. Place the wrapped vine leaves in a baking dish, seam side down. Pour lemon juice and water over the wraps.
  7. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  8. Remove from the oven, let cool for a few minutes, then serve warm.
