Ingredients

  • Lamb chops - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Cherry tomatoes - 200 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, ground cumin, salt, and black pepper to create a marinade.
  2. Add the lamb chops to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat a grill or grill pan over medium-high heat.
  4. While the grill is heating, toss the sliced zucchini, red bell pepper, and cherry tomatoes with a drizzle of olive oil, salt, and pepper.
  5. Once the grill is hot, place the marinated lamb chops on the grill. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  6. At the same time, place the seasoned vegetables on the grill. Grill for about 8-10 minutes, turning occasionally, until tender and slightly charred.
  7. Remove the lamb chops and vegetables from the grill. Let the lamb rest for a few minutes before serving.
  8. Serve the grilled lamb chops with the roasted vegetables and garnish with fresh parsley.
