Ingredients

  • All-purpose flour - 300 grams
  • Water - 180 ml
  • Active dry yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Ground lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Egg yolk - 1, for glazing

Steps

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place it in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the filling. In a skillet, heat a little olive oil over medium heat and sauté the chopped onion and minced garlic until soft.
  5. Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, then stir in the tomato paste, paprika, cumin, black pepper, and salt. Cook for another 5 minutes, then remove from heat and mix in the chopped parsley.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape, about 1 cm thick.
  8. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the lamb mixture onto the center of each oval, leaving a border around the edges.
  9. Fold the edges of the dough over the filling to create a boat shape. Brush the edges with egg yolk for a golden finish.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown. Remove from oven and let cool slightly before serving.
