Ingredients

  • Lamb trotters - 500 grams
  • Water - 1.5 liters
  • Onion - 1 medium, quartered
  • Carrot - 1 medium, chopped
  • Celery - 1 stalk, chopped
  • Garlic - 4 cloves, smashed
  • Bay leaf - 1
  • Black peppercorns - 5
  • Salt - to taste
  • Lemon juice - 2 tablespoons
  • Fresh parsley - for garnish

Steps

  1. In a large pot, add the lamb trotters and cover them with 1.5 liters of water.
  2. Bring the pot to a boil over medium-high heat, then reduce heat and skim off any foam that rises to the surface.
  3. Add the quartered onion, chopped carrot, chopped celery, smashed garlic, bay leaf, black peppercorns, and salt to the pot.
  4. Cover and simmer the soup on low heat for about 2-2.5 hours, or until the trotters are tender and the meat easily pulls away from the bone.
  5. Remove the trotters from the pot and let them cool slightly, then separate the meat from the bones, discarding any gristle.
  6. Return the meat to the pot and adjust seasoning with more salt if necessary.
  7. Serve hot, drizzled with lemon juice and garnished with fresh parsley.
