Ingredients
- Lamb trotters - 500 grams
- Water - 1.5 liters
- Onion - 1 medium, quartered
- Carrot - 1 medium, chopped
- Celery - 1 stalk, chopped
- Garlic - 4 cloves, smashed
- Bay leaf - 1
- Black peppercorns - 5
- Salt - to taste
- Lemon juice - 2 tablespoons
- Fresh parsley - for garnish
Steps
- In a large pot, add the lamb trotters and cover them with 1.5 liters of water.
- Bring the pot to a boil over medium-high heat, then reduce heat and skim off any foam that rises to the surface.
- Add the quartered onion, chopped carrot, chopped celery, smashed garlic, bay leaf, black peppercorns, and salt to the pot.
- Cover and simmer the soup on low heat for about 2-2.5 hours, or until the trotters are tender and the meat easily pulls away from the bone.
- Remove the trotters from the pot and let them cool slightly, then separate the meat from the bones, discarding any gristle.
- Return the meat to the pot and adjust seasoning with more salt if necessary.
- Serve hot, drizzled with lemon juice and garnished with fresh parsley.
