Ingredients

  • Lamb shoulder - 250 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Water - 1 liter
  • Kuzu (lamb) bone - 1 (optional for added flavor)
  • Salt - 1 teaspoon (or to taste)
  • Black pepper - 1/2 teaspoon
  • Dried mint - 1 teaspoon
  • Lemon - 1, juiced
  • Chickpeas - 100 grams, cooked (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat and add the diced lamb. Brown the meat on all sides for about 5-7 minutes.
  2. Add the chopped onion, carrot, celery, and minced garlic to the pot. Sauté for another 5 minutes until the vegetables are softened.
  3. Pour in the water and add the lamb bone if using. Bring to a boil then reduce to a simmer.
  4. Add salt, black pepper, and dried mint. Cover the pot and let it simmer for 30 minutes, or until the lamb is tender.
  5. If using, add the cooked chickpeas and simmer for an additional 10 minutes.
  6. Remove from heat, stir in the lemon juice, and adjust the seasoning if necessary.
  7. Serve hot, garnished with additional dried mint if desired.
