Ingredients
- Lamb shoulder - 250 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Water - 1 liter
- Kuzu (lamb) bone - 1 (optional for added flavor)
- Salt - 1 teaspoon (or to taste)
- Black pepper - 1/2 teaspoon
- Dried mint - 1 teaspoon
- Lemon - 1, juiced
- Chickpeas - 100 grams, cooked (optional)
Steps
- In a large pot, heat the olive oil over medium heat and add the diced lamb. Brown the meat on all sides for about 5-7 minutes.
- Add the chopped onion, carrot, celery, and minced garlic to the pot. Sauté for another 5 minutes until the vegetables are softened.
- Pour in the water and add the lamb bone if using. Bring to a boil then reduce to a simmer.
- Add salt, black pepper, and dried mint. Cover the pot and let it simmer for 30 minutes, or until the lamb is tender.
- If using, add the cooked chickpeas and simmer for an additional 10 minutes.
- Remove from heat, stir in the lemon juice, and adjust the seasoning if necessary.
- Serve hot, garnished with additional dried mint if desired.
