- Fresh thyme - 2 sprigs, chopped
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper - 1, cut into chunks
- Zucchini - 1 small, sliced
- Cherry tomatoes - 200 grams
Steps
- In a large bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade and mix well. Cover and let it marinate in the refrigerator for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb, red bell pepper chunks, zucchini slices, and cherry tomatoes onto skewers, alternating between the ingredients.
- Once the grill is hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the lamb is cooked to your desired doneness.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
