Ingredients

  • Lamb shoulder - 400 grams, cut into cubes

  • Garlic - 2 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red bell pepper - 1, cut into chunks
  • Zucchini - 1 small, sliced
  • Cherry tomatoes - 200 grams

Steps

  1. In a large bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade and mix well. Cover and let it marinate in the refrigerator for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb, red bell pepper chunks, zucchini slices, and cherry tomatoes onto skewers, alternating between the ingredients.
  5. Once the grill is hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the lamb is cooked to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
