Ingredients

  • Lamb shoulder - 500 grams, cubed
  • Carrots - 2 medium, sliced
  • Zucchini - 1 medium, diced
  • Red onion - 1 large, chopped
  • Garlic - 3 cloves, minced
  • Tomatoes - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Rosemary - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bone broth - 250 milliliters
  • Bay leaf - 1

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large mixing bowl, combine the cubed lamb shoulder with olive oil, garlic, rosemary, thyme, salt, and black pepper. Mix well to coat the meat evenly.
  3. In a clay pot or Dutch oven, layer the chopped red onion, sliced carrots, and diced zucchini at the bottom.
  4. Add the marinated lamb on top of the vegetables and then layer the diced tomatoes over the meat.
  5. Pour the bone broth into the pot and add the bay leaf.
  6. Cover the pot with a lid and place it in the preheated oven.
  7. Cook for 2 hours, or until the lamb is tender and the flavors meld together.
  8. Remove from the oven and let it rest for 10 minutes before serving.
