- Lamb shoulder - 500 grams, cubed
- Carrots - 2 medium, sliced
- Zucchini - 1 medium, diced
- Red onion - 1 large, chopped
- Garlic - 3 cloves, minced
- Tomatoes - 2 medium, diced
- Olive oil - 2 tablespoons
- Rosemary - 1 teaspoon, dried
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bone broth - 250 milliliters
- Bay leaf - 1
Steps
- Preheat the oven to 160°C (320°F).
- In a large mixing bowl, combine the cubed lamb shoulder with olive oil, garlic, rosemary, thyme, salt, and black pepper. Mix well to coat the meat evenly.
- In a clay pot or Dutch oven, layer the chopped red onion, sliced carrots, and diced zucchini at the bottom.
- Add the marinated lamb on top of the vegetables and then layer the diced tomatoes over the meat.
- Pour the bone broth into the pot and add the bay leaf.
- Cover the pot with a lid and place it in the preheated oven.
- Cook for 2 hours, or until the lamb is tender and the flavors meld together.
- Remove from the oven and let it rest for 10 minutes before serving.
