- Cumin - 1 teaspoon
- Dried oregano - 1 teaspoon

- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 30 grams, chopped
- Fresh mint - 30 grams, chopped
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 small, diced
Steps
- In a bowl, combine olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill or barbecue to medium-high heat.
- Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
- While the chicken is grilling, prepare the salad by combining chopped parsley, mint, cherry tomatoes, and cucumber in a bowl. Drizzle with olive oil and a squeeze of lemon juice, and toss gently.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
- Serve the grilled chicken alongside the herb salad.
