  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 30 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced

Steps

  1. In a bowl, combine olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill or barbecue to medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F).
  5. While the chicken is grilling, prepare the salad by combining chopped parsley, mint, cherry tomatoes, and cucumber in a bowl. Drizzle with olive oil and a squeeze of lemon juice, and toss gently.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
