Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Yogurt (unsweetened, plain) - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the lamb shoulder into 4 equal pieces and place it in a large bowl.
  2. In a separate bowl, mix olive oil, minced garlic, cumin, paprika, black pepper, and salt to create a marinade.
  3. Pour the marinade over the lamb, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat your BBQ grill to medium-high heat.
  5. Once the grill is hot, place the marinated lamb pieces on the grill and cook for about 5-7 minutes on each side, or until they reach your desired doneness.
  6. While the lamb is grilling, prepare the yogurt sauce by mixing yogurt with lemon juice, salt, and chopped parsley in a small bowl.
  7. Once the lamb is cooked, remove it from the grill and let it rest for 5 minutes before serving.
  8. Serve the grilled lamb with the yogurt sauce on the side.
