Ingredients

  • Greek yogurt - 100 grams
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 2 sprigs, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, combine olive oil, Greek yogurt, minced garlic, ground cumin, ground paprika, salt, black pepper, chopped rosemary, and lemon juice to create a marinade.
  2. Cut the lamb shoulder into 4 equal pieces and add them to the marinade, ensuring they are well-coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Remove the lamb from the marinade and let any excess marinade drip off.
  5. Grill the lamb pieces for about 15-20 minutes on each side, or until cooked to your desired doneness, using a meat thermometer to check for an internal temperature of at least 60°C (140°F) for medium-rare.
  6. Once cooked, let the lamb rest for 5 minutes before serving.
