Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Yogurt - 100 grams
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish
  • Pita bread - 2 pieces

Steps

  1. Cut the lamb shoulder into chunks and place them in a large bowl.
  2. In a separate bowl, combine olive oil, chopped onion, minced garlic, yogurt, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
  3. Pour the marinade over the lamb and mix thoroughly to ensure all pieces are coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  4. Preheat your grill or oven to 180°C (350°F).
  5. Skewer the marinated lamb pieces onto metal or soaked wooden skewers.
  6. Place the skewers on the grill or in the oven and cook for about 1 to 1.5 hours, turning occasionally, until the lamb is tender and slightly charred.
  7. Once cooked, remove from heat and let rest for a few minutes before serving.
  8. Serve the kebabs with warmed pita bread and garnish with fresh parsley.
