- Lamb shoulder - 500 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 4 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 large, chopped
- Red bell pepper - 1 medium, chopped
- Yogurt - 100 grams
- Lemon juice - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 150°C (300°F).
- In a large ovenproof pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
- Add the diced carrot, chopped tomato, and red bell pepper to the pot. Cook for an additional 5 minutes until the vegetables start to soften.
- Cut the lamb shoulder into large chunks and add it to the pot. Season with cumin, paprika, salt, and black pepper. Stir well to coat the meat with the spices.
- Pour in the yogurt and lemon juice, mixing everything together. Cover the pot with a lid.
- Transfer the pot to the preheated oven and cook for about 2.5 hours, or until the lamb is tender and easily pulls apart with a fork.
- Remove the pot from the oven and let it rest for 10 minutes before serving. Garnish with chopped fresh parsley.
