Ingredients

  • Lamb shoulder - 500 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Carrot - 1 medium, diced
  • Tomato - 1 large, chopped
  • Red bell pepper - 1 medium, chopped
  • Yogurt - 100 grams
  • Lemon juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 150°C (300°F).
  2. In a large ovenproof pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
  3. Add the diced carrot, chopped tomato, and red bell pepper to the pot. Cook for an additional 5 minutes until the vegetables start to soften.
  4. Cut the lamb shoulder into large chunks and add it to the pot. Season with cumin, paprika, salt, and black pepper. Stir well to coat the meat with the spices.
  5. Pour in the yogurt and lemon juice, mixing everything together. Cover the pot with a lid.
  6. Transfer the pot to the preheated oven and cook for about 2.5 hours, or until the lamb is tender and easily pulls apart with a fork.
  7. Remove the pot from the oven and let it rest for 10 minutes before serving. Garnish with chopped fresh parsley.
