Steps
- 1. Begin by cutting the lamb shoulder into thin slices. Marinate with olive oil, minced garlic, cumin, paprika, salt, and black pepper for at least 30 minutes.
- 2. While the lamb marinates, prepare the cauliflower rice. Steam or microwave the cauliflower florets until tender, then pulse in a food processor until it resembles rice. Set aside.
- 3. In a medium saucepan, combine tomato paste and canned diced tomatoes over medium heat. Stir well, season with salt and pepper, and let simmer for about 10 minutes to thicken.
