Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Greek yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Cauliflower - 200 grams (for cauliflower rice)

Steps

  1. 1. Begin by cutting the lamb shoulder into thin slices. Marinate with olive oil, minced garlic, cumin, paprika, salt, and black pepper for at least 30 minutes.
  2. 2. While the lamb marinates, prepare the cauliflower rice. Steam or microwave the cauliflower florets until tender, then pulse in a food processor until it resembles rice. Set aside.
  3. 3. In a medium saucepan, combine tomato paste and canned diced tomatoes over medium heat. Stir well, season with salt and pepper, and let simmer for about 10 minutes to thicken.
  4. 4. In a grill pan or skillet over medium-high heat, cook the marinated lamb slices for about 3-4 minutes on each side until they are well browned and cooked through.
  5. 5. To serve, place a generous portion of cauliflower rice on each plate, top with the grilled lamb slices, and spoon over the tomato sauce. Finally, add a dollop of Greek yogurt and sprinkle with fresh parsley.
